Chinese Stock and Soups Recipes - Pork and Watercress Soup Recipe

Ingredients

  • 1.5 l/6 cups chicken stock

  • 100 g/4 oz lean pork, cut into strips

  • 3 stalks celery, diagonally sliced

  • 2 spring onions (scallions), sliced

  • 1 bunch watercress

  • 5 ml/1 tsp salt


Method:

  1. Bring the stock to the boil, add the pork and celery, cover and simmer for 15 minutes.

  2. Add the spring onions, watercress and salt and simmer, un­covered, for about 4 minutes.
