Ingredients

1.2l/5 cups chicken stock
-
200g/7oz canned tomatoes,
drained and chopped
-
225g/8oz tofu, cubed
-
225g/8oz spinach, chopped
-
30ml/2 tbsp soy sauce
-
5ml/1 tsp brown sugar
-
salt and freshly ground
pepper
Method:
-
Bring the stock
to the boil then add the tomatoes, tofu and spinach
and stir gently.
-
Return to the
boil and simmer for 5 minutes. Add the soy sauce and
sugar and season to taste with salt and pepper.
Simmer for 1 minute before serving.
