Chinese Stock and Soups Recipes - Spinach and Tofu Soup Recipe

Ingredients

  • 1.2l/5 cups chicken stock

  • 200g/7oz canned tomatoes, drained and chopped

  • 225g/8oz tofu, cubed

  • 225g/8oz spinach, chopped

  • 30ml/2 tbsp soy sauce

  • 5ml/1 tsp brown sugar

  • salt and freshly ground pepper


Method:

  1. Bring the stock to the boil then add the tomatoes, tofu and spinach and stir gently.

  2. Return to the boil and simmer for 5 minutes. Add the soy sauce and sugar and season to taste with salt and pepper. Simmer for 1 minute before serving.
