Chinese Stock and Soups Recipes - Sweet Corn and Crab Soup Recipe

Ingredients

  • 1.2l/5 cups chicken stock

  • 200g/7oz sweet corn

  • salt and freshly ground pepper

  • 1 egg, beaten

  • 200g/7oz crab meat, flaked

  • 3 shallots, chopped


Method:

  1. Bring the stock to the boil, add the sweet corn, season with salt and pepper. Simmer for 5 minutes.

  2. Just before serving, pour the eggs through a fork and swirl on top of the soup. Serve sprinkle with crab meat and chopped shallots.
