Ingredients

1.2l/5 cups chicken stock

200g/7oz sweet corn
-
salt and freshly ground
pepper
-
1 egg, beaten
-
200g/7oz crab meat, flaked

3 shallots, chopped
Method:
-
Bring the stock
to the boil, add the sweet corn, season with salt
and pepper. Simmer for 5
minutes.
-
Just before serving, pour the eggs through
a fork and swirl on top of the soup. Serve sprinkle
with crab meat and chopped shallots.
