Chinese Stock and Soups Recipes - Tomato and Spinach Soup Recipe

Ingredients

  • 1.2 l/2 pts/5 cups chicken stock

  • 225g/8oz canned chopped tomatoes

  • 225g/8oz tofu, cubed

  • 225g/8oz spinach

  • 30ml/2 tbsp soy sauce

  • salt and freshly ground pepper

  • 2.5ml/1/2 tsp sugar

  • 2.5ml/1/2 tsp wine or dry sherry


Method:

  1. Bring the stock to the boil then add the tomatoes, tofu and spinach and simmer for 2 minutes.

  2. Add the remaining ingredients and simmer for 2 minutes then stir well and serve.
