Ingredients

1.2 l/2 pts/5 cups chicken
stock
-
225g/8oz canned chopped
tomatoes
-
225g/8oz tofu, cubed
-
225g/8oz spinach
-
30ml/2 tbsp soy sauce
-
salt and freshly ground
pepper
-
2.5ml/1/2 tsp sugar
-
2.5ml/1/2 tsp wine or dry
sherry
Method:
-
Bring the stock
to the boil then add the tomatoes, tofu and spinach
and simmer for 2 minutes.
-
Add the remaining
ingredients and simmer for 2 minutes then stir well
and serve.
