Chinese Stock and Soups Recipes - Vegetable Soup Recipe

Ingredients

  • 6 Chinese dried mushrooms

  • 1 liter/4 1/4 cups vegetable stock

  • 50 g/2 oz bamboo shoots, cut into strips

  • 50g/2 oz water chestnuts, sliced

  • 8 snow peas, sliced

  • 5 ml/1 tsp soy sauce


Method:

  1. Soak the mushrooms in warm water for 30 minutes then drain. Discard the stems and cut the caps into strips.

  2. Add them to the stock with the bamboo shoots and water chestnuts and bring to the boil, cover and simmer for 10 minutes.

  3. Add the snow peas and soy sauce, cover and simmer for 2 minutes. Leave to stand for 2 minutes before serving.
