Ingredients

1 liter/4 1/4 cups
chicken stock
-
1 onion, finely chopped
-
1 stick celery, finely
chopped

225 g/8 oz watercress,
roughly chopped
-
salt and freshly ground pepper
Method:

Bring the stock,
onion and celery to the boil, cover and simmer for
15 minutes.
-
Add the watercress, cover and simmer for
5 minutes. Season with salt and pepper.
