Chinese Stock and Soups Recipes - Watercress Soup Recipe

Ingredients

  • 1 liter/4 1/4 cups chicken stock

  • 1 onion, finely chopped

  • 1 stick celery, finely chopped

  • 225 g/8 oz watercress, roughly chopped

  • salt and freshly ground pepper


Method:

  1. Bring the stock, onion and celery to the boil, cover and simmer for 15 minutes.

  2. Add the watercress, cover and simmer for 5 minutes. Season with salt and pepper.
