Low Fat Recipes - Beef And Broccoli

Ingredients

  • 1/2 lb (225g) beef fillet, thinly sliced

  • 2 tsp (10ml) salt-reduced soy sauce

  • 1/3 cup (85ml) vegetable stock

  • 1 lb (450g) broccoli florets

  • 1/2 tsp (2.5ml) sugar

  • 1/2 tsp (2.5ml) chopped fresh ginger

  • 1 tbsp (15ml) cornstarch blended with 3 tbsp (45ml) vegetable stock


Method:

  1. Combine sliced beef with soy sauce, and let marinate 15 minutes. Heat a non-stick pan. Add beef and stir-fry 1 minute. Remove from pan and set aside.

  2. Add stock to pan and bring to a boil. Add broccoli, sugar and ginger, and cook covered over high heat 3 minutes.

  3. Return beef to pan. Stir in blended cornstarch and tock to thicken. Serve at once.
