Low Fat Recipes - Beef And Broccoli
Ingredients

1/2 lb (225g) beef fillet,
thinly sliced

2 tsp (10ml) salt-reduced soy
sauce
-
1/3 cup (85ml) vegetable stock
-
1 lb (450g) broccoli florets
-
1/2 tsp (2.5ml) sugar
-
1/2 tsp (2.5ml) chopped fresh
ginger
-
1 tbsp (15ml) cornstarch
blended with 3 tbsp (45ml) vegetable stock
Method:

Combine sliced beef with soy sauce, and let marinate
15 minutes. Heat a non-stick pan. Add beef and
stir-fry 1 minute. Remove from pan and set aside.

Add
stock to pan and bring to a boil. Add broccoli,
sugar and ginger, and cook covered over high heat 3
minutes.

Return beef to pan. Stir in blended cornstarch and
tock to thicken. Serve at once.
