Low Fat Recipes - Beef Fillet With Sweet And Sour Sauce

Ingredients

  • 1 lb (450g) beef fillet, cut in 0.5 inch (1cm) cubes

  • 1 tbsp (15ml) salt-reduced soy sauce

  • 1/4 tsp (1ml) five-spice powder

SWEET AND SOUR SAUCE

  • 1 cup (250ml) unsweetened pineapple juice

  • 1 tbsp (15ml) sugar

  • 1 tbsp (15ml) white vinegar

  • 1 tbsp (15ml) cornstarch

  • 1 tbsp (15ml) sherry

  • 1 cup (250ml) beef consommé

  • 1/2 green pepper, cut in 1/2 inch (1cm) dice

  • 1/4 carrot, parboiled, cut in 1/2 inch (1cm) dice

  • 1/4 cup (60ml) unsweetened pineapple pieces

  • 1/4 lb (110g) diced /Chinese mixed pickles


Method:

  1. Combine diced beef with soy sauce and five-spice powder and marinate 15 minutes. Heat a non-stick pan, add one-quarter of the beef and stir-fry 3-4 minutes. Remove from pan. Repeat with remaining beef. Set aside and keep warm.

  2. Bring pineapple juice, sugar and vinegar to a boil. Blend cornstarch, sherry and stock to a paste. Stir into pineapple juice to thicken.

  3. Add vegetables, pineapple and pickles, simmer 3 minutes. Add diced beef to heat through. Serve at once.
