1 lb (450g) fresh scallops or
thick white fish fillets
3 tbsp (45ml) hoisin sauce
1 large onion, cut in 3/4 inch
(2cm) cubes
8 small satay sticks, soaked in
cold water
1/2 cup (125ml) orange juice
1 tbsp (15ml) salt-reduced soy
sauce
Method:
Combine scallops wit hoisin sauce. Thread onto
skewers with diced onion. Place on sheet of foil and
brush with a mixture of orange juice and soy sauce.
Broil under medium heat 2-4 minutes, until scallops
are white. Brush with orange juice and soy sauce
during cooking. The remaining juice and be thickened
and served as a sauce.
