Recipes - Barbecued Pork (Char Shiu) Recipe
Ingredients
2 strips raw leg of pork
ginger powder
finely chopped garlic
1 dessertspoon Soya bean
1 dessertspoon red bean curd
1/4-1/2 teaspoon ginger sherry
good pinch each salt and Ve-Tsin
(M.S.G.)
very generous pinch sugar
sprinkling
Chinese red coloring powder cucumber, lettuce
and parsley
Method:
Have the pork cut
into two 6-inch strips, 1 1/2 inches thick and 1 1/2
inches wide. Dust them with the ginger powder and
garlic.
In a basin, mix
together the Soya bean, bean curd, sherry, salt,
Ve-Tsin and sugar. Mash them until they are
completely mixed. Lay the pieces of pork in an oiled
baking tin.
Work the above
mixture and then the coloring powder into them on
both sides. Place the tin in the hottest part of the
oven, preheated to 400°F. or Gas Mark 6, and bake
for 25 minutes. Turn and bake for a further 15
minutes.
Leave to become
cold. Cut into slices and garnish with cucumber,
lettuce and parsley.
