Recipes - Chicken with Bean Sprouts and Crispy Noodles

Ingredients

1 noodle nest

1 tablespoon peanut oil

1 slice onion

2 tablespoons bean sprouts

2 tablespoons thin strips
cooked chicken breast

pinch each salt, sugar and Ve-Tsin
(M.S.G.)

1/4 teaspoon soy sauce
-
1/4 teaspoon ginger sherry
-
1/2 teaspoon sesame oil
-
4 tablespoons chicken stock
-
3/4 teaspoon corn-flour
-
1 tablespoon water
-
few extra strips cooked
chicken breast (for garnish)
Method:

Lower the noodle
'nest' into hot oil for its first immersion. Lift out, drain and set aside
for the final operation.

Heat the oil in a
frying-pan. Cut the slice of onion into strips and
add them. Cook for 1 minute. Add the bean sprouts
and cook for a further minute.

Add the chicken,
seasonings, soy sauce, sherry, sesame oil and
chicken stock and make really hot, tossing the
ingredients about. Add the corn-flour, blended with
the water, and cook for 1 1/2 minutes. Turn into a
heated serving dish.

Reheat the deep
oil to 365°-375°F. or 185°-190°C. Lower the basket
containing the noodle 'nest' into it and leave just
long enough to crisp the noodles to a deep warm
cream color.

Place on top of
the savory
mixture. Serve with watercress and three sauces -
chili, mustard and plum .
Note: If you can buy noodles cooked to the
preliminary stage and ready for the second immersion
in the hot oil, the time of preparation will be much
lessened.
