Chinese Chickens Recipes - Chicken with Pineapple Recipe

Ingredients

  • 2 tablespoons raw chicken breast

  • 3 oz. canned or fresh pineapple

  • 2 dessertspoons peanut oil

  • 1 small onion, roughly chopped

  • 1/2 teaspoon ginger sherry

  • pinch each salt, sugar and Ve-Tsin (M.S.G.)

  • 1/2 teaspoon soy sauce

  • 4 tablespoons chicken stock

  • 1/2 teaspoon corn-flour

  • 1 dessertspoon water


Method:

  1. Cut chicken into thin slices. Drain pineapple. If in rings, cut into small wedges. If fresh cut a slice and remove peel; core and cut into small wedges.

  2. Heat half the oil in a frying-pan and fry pineapple and onion for 3 minutes. Remove and set aside. Wipe out pan.

  3. Heat remaining oil in it. Add chicken pieces; toss and turn them for 3 minutes. Add sherry, seasonings, soy sauce and stock and bring to the boil.

  4. Return pineapple and onion to pan. Add corn-flour, blended with water, and heat through for 1 1/2 minutes.
