Chinese Chickens Recipes - Chicken with White Button Mushrooms Recipe

Ingredients

  • 1 small onion

  • 2 ox. cultivated button mushrooms

  • 3 tablespoons raw dark chicken met

  • 1 tablespoon peanut oil

  • 1/2 teaspoon ginger sherry

  • 1/4 pint (U.S. 5/8 cup) chicken stock

  • pinch each salt, sugar and Ve-Tsin (M.S.G.)

  • 1/2 teaspoon soy sauce

  • 1 teaspoon corn-flour

  • 1 dessertspoon cold water


Method:

  1. Roughly chop the onion and quarter the mushrooms. After removing all tendons, cut the chicken meat into pieces the size of a largish butter bean.

  2. Heat the oil in a frying-pan. Cook the onion for 2 minutes at a high heat. Add and fry the chicken pieces for 3-4 minute. Add the mushrooms and cook them for 1 minute.

  3. Sprinkle in the sherry, stock, seasonings and soy sauce and cook for 1 minute.

  4. Stir in the corn-flour, blended with the water, bring to the boil and simmer for 1 1/2 minutes.
