Recipes - Fillet of Lamb with Vegetables Recipe
Ingredients

4 oz. lamb (no fat)
-
1/2 teaspoon corn-flour
-
1/2 beaten egg to bind
-
salt and pepper
-
2 tablespoons peanut oil
-
1 green pepper, cut in
pieces
-
1 tablespoon Chinese
mushrooms soaked 1 hour, cut in very
fine strips
-
1 tablespoon celery, cut in
very fine strips
-
1 tablespoon spring onions
-
1 dessertspoon dry white
wine
-
tiny pinch Ve-Tsin
(M.S.G.)
-
1/2 tablespoon soy sauce
-
1 clove garlic, finely
chopped
-
pinch white pepper
Method:
-
Cut the lamb in
extremely thin strips. Work in the corn-flour and the
egg thoroughly with a little salt and pepper.

Heat very well
the peanut oil in a frying-pan and try the meat in it
for 1 minute stirring it and tossing it all the
time. Add the green pepper, Chinese mushrooms and
celery and toss and cook for 1 minute.

Turn on to a
sieve to drain the oil off. To the frying-pan add
the onions and toss about. Return the meat and
vegetables to the frying-pan.

Add dry white wine, Ve-Tsin, soy sauce, finely chopped clove garlic and
white pepper. Heat through and toss about and turn
on to a hot dish and serve.
