Chinese Meats Recipes - Fillet of Lamb with Vegetables Recipe

Ingredients

  • 4 oz. lamb (no fat)

  • 1/2 teaspoon corn-flour

  • 1/2 beaten egg to bind

  • salt and pepper

  • 2 tablespoons peanut oil

  • 1 green pepper, cut in pieces

  • 1 tablespoon Chinese mushrooms soaked 1 hour, cut in very fine strips

  • 1 tablespoon celery, cut in very fine strips

  • 1 tablespoon spring onions

  • 1 dessertspoon dry white wine

  • tiny pinch Ve-Tsin (M.S.G.)

  • 1/2 tablespoon soy sauce

  • 1 clove garlic, finely chopped

  • pinch white pepper


Method:

  1. Cut the lamb in extremely thin strips. Work in the corn-flour and the egg thoroughly with a little salt and pepper.

  2. Heat very well the peanut oil in a frying-pan and try the meat in it for 1 minute stirring it and tossing it all the time. Add the green pepper, Chinese mushrooms and celery and toss and cook for 1 minute.

  3. Turn on to a sieve to drain the oil off. To the frying-pan add the onions and toss about. Return the meat and vegetables to the frying-pan.

  4. Add dry white wine, Ve-Tsin, soy sauce, finely chopped clove garlic and white pepper. Heat through and toss about and turn on to a hot dish and serve.
