Chinese Chickens Recipes - Fried Chicken with Noodles Recipe

Ingredients

  • 1/4 recipe egg noodles

  • peanut oil

  • 4 tablespoons raw breast of chicken, shredded

  • 1 medium-sized onion, cut in thin strips

  • 1 shredded Chinese mushroom

  • 4 oz. bean sprouts (picked over)

  • 1 tablespoon canned bamboo shoots, shredded

  • 1/4 pint (U.S. 5/8 cup) chicken stock

  • pinch each salt, sugar and V e- Tsin (M.S.G.)

  • 1/2 teaspoon sesame oil

  • 1/2 teaspoon ginger sherry

  • 1/2 teaspoon soy sauce

  • 3/4 teaspoon corn-flour

  • 1 dessertspoon cold water

  • 1 tablespoon boiled ham, shredded


Method:

  1. Boil the noodles in plenty of water for 10 minutes. Drain well and sprinkle a few drops of peanut oil over them.

  2. Heat 1 tablespoon peanut oil in a frying-pan and quickly cook the chicken strips in it for less than a minute, tossing and turning them all the time. Transfer them to a dish and keep them warm.

  3. Add the onion to the pan, cook it for 1/4 minute then add the mushroom and cook for a further 3/4 minute, stirring them about. Now add the bean sprouts and bamboo shoots with, if necessary, a little more oil and cook for 2 minutes.

  4. Next, add the stock, seasonings, sesame oil, sherry and soy sauce and cook for 1/2 minute. Blend the corn-flour with the water and stir it in. Cook for 1 1/2 minutes. Add the boiled noodles and ham and heat through.

  5. Lastly add the chicken and stir all together for 1/4 minute over a good heat. Turn the mixture into a heated serving dish and sprinkle with the very finely shredded ham.
