Chinese Chicken Recipes - Poached Chicken with Tomatoes Recipe

Ingredients

  • 4 chicken portions

  • 4 tomatoes, skinned and quartered

  • 15 ml/1 tbsp rice wine or dry sherry

  • 15 ml/1 tbsp groundnut (peanut) oil

  • salt


Method:

  1. Place the chicken in a pan and just cover with cold water. Bring to the boil, cover and simmer for 20 minutes.

  2. Add the tomatoes, wine or sherry, oil and salt, cover and simmer for a further 10 minutes until the chicken is cooked.

  3. Arrange the chicken on a warmed serving plate and chop into serving pieces. Reheat the sauce and pour over the chicken to serve.
