Chinese Chicken Recipes - Poached Chicken with Tomatoes Recipe
Ingredients

4 chicken portions
-
4 tomatoes, skinned and
quartered
-
15 ml/1 tbsp rice wine
or dry sherry
-
15 ml/1 tbsp groundnut
(peanut) oil

salt
Method:
-
Place the chicken in a pan and just cover with cold
water. Bring to the boil, cover and simmer for 20
minutes.

Add the tomatoes, wine or sherry, oil and
salt, cover and simmer for a further 10 minutes
until the chicken is cooked.
-
Arrange the chicken on
a warmed serving plate and chop into serving pieces.
Reheat the sauce and pour over the chicken to serve.
