Chinese Meats Recipes - Pork and Bean Sprouts Recipe

Ingredients

  • 3 large tablespoon shredded raw pork

  • 1 teaspoon peanut oil

  • pinch salt

  • pinch sugar

  • pinch Ve-Tsin (M.S.G.)

  • 1 teaspoon soy sauce

  • 1 teaspoon ginger sherry

  • 2 cloves garlic

  • 8 oz. bean sprouts

  • pork dripping

  • 4-5 tablespoons stock

  • 1 teaspoon corn-flour

  • 1 tablespoon water

  • 1 onion 'flower'


Method:

  1. Cut the pork into thins strips and place them in a bowl.

  2. Add the next 6 ingredients and 1 finely chopped clove of garlic and work them very well into the meat. Set aside.

  3. Pick over the sprouts to get rid of any seeds. Melt 1 tablespoon dripping and cook the bean sprouts in it for under 2 minutes. Remove the sprouts.

  4. Add a little more pork dripping and then crush the other clove of garlic, adding it to the bean sprouts. After 1/4 minute, discard the garlic.

  5. Raise the heat. Add the pork and move it about for 2-3 minutes. Add the stock, bring to the boil then add the corn-flour, blended with the water. Add the bean sprouts and heat through, tossing all about.

  6. Turn into a heated serving dish and garnish with the onion 'flower'.
