Chinese Chicken Recipes - Red-Cooked Chicken Recipe
Ingredients

450 g/1lb
chicken, sliced

120 ml/4 fl
oz/1/2 cup soy sauce

15 ml/1 tbsp sugar

2 slices ginger root,
finely chopped

90 ml/6 tbsp chicken stock
-
30 ml/2 tbsp rice wine or
dry sherry

spring onions (scallions),
sliced
Method:
-
Place all the ingredients in a pan and bring to the
boil. Cover and simmer for about 15 minutes until
the chicken is cooked through.

Remove the lid and
continue to simmer for about 5 minutes, stirring
occasionally, until the sauce has thickened. Serve
sprinkled with spring onions.
