Chinese Chicken Recipes - Red-Cooked Chicken Recipe

Ingredients

  • 450 g/1lb chicken, sliced

  • 120 ml/4 fl oz/1/2 cup soy sauce

  • 15 ml/1 tbsp sugar

  • 2 slices ginger root, finely chopped

  • 90 ml/6 tbsp chicken stock

  • 30 ml/2 tbsp rice wine or dry sherry

  • 4 spring onions (scallions), sliced


Method:

  1. Place all the ingredients in a pan and bring to the boil. Cover and simmer for about 15 minutes until the chicken is cooked through.

  2. Remove the lid and continue to simmer for about 5 minutes, stirring occasionally, until the sauce has thickened. Serve sprinkled with spring onions.
