Chinese Chicken Recipes - Red Cooked Spiced Chicken Recipe

Ingredients

  • 2 slices ginger root

  • 2 spring onions (scallions)

  • 1 chicken

  • 3 cloves star anise

  • 1/2 cinnamon stick

  • 15 ml/1 tbsp Szechwan peppercorns

  • 75 ml/5 tbsp soy sauce

  • 75 ml/5 tbsp rice wine or dry sherry

  • 75 ml/5 tbsp sesame oil

  • 15 ml/1 tbsp sugar


Method:

  1. Place the ginger and spring onions inside the chicken cavity and place the chicken in a pan.

  2. Tie the star anise, cinnamon and peppercorns in a piece of muslin and add it to the pan. Pour over the soy sauce, wine or sherry and sesame oil.

  3. Bring to the boil, cover and simmer for about 45 minutes. Add the sugar, cover and simmer for a further 10 minutes until the chicken is cooked through.
