Ingredients
2 slices ginger root
2 spring onions (scallions)
1 chicken
3 cloves star anise
1/2 cinnamon stick
15 ml/1 tbsp Szechwan
peppercorns
75 ml/5 tbsp soy sauce
75 ml/5 tbsp rice wine or
dry sherry
75 ml/5 tbsp sesame oil
15 ml/1 tbsp sugar
Method:
Place the ginger and spring onions inside the
chicken cavity and place the chicken in a pan.
Tie
the star anise, cinnamon and peppercorns in a piece
of muslin and add it to the pan. Pour over the soy
sauce, wine or sherry and sesame oil.
Bring to the
boil, cover and simmer for about 45 minutes. Add the
sugar, cover and simmer for a further 10 minutes
until the chicken is cooked through.
