Chinese Chicken Recipes - Royal Chicken Wings Recipe

Ingredients

  • 12 chicken wings

  • 250 ml/8 fl oz/1 cup groundnut (peanut) oil

  • 15 ml/1 tbsp granulated sugar

  • 2 spring onions (scallions), cut into chunks

  • 5 slices root ginger

  • 5 ml/1 tsp salt

  • 45 ml/3 tbsp soy sauce

  • 250 ml/8 fl oz/1 cup rice wine or dry sherry

  • 250 ml/8 fl oz/1 cup chicken stock

  • 10 slices bamboo shoots

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 45 ml/3 tbsp water

  • 2.5 m/1/2 tsp sesame oil


Method:

  1. Blanch the chicken wings in boiling water for 5 minutes then drain well. Heat the oil, add the sugar and stir until melted and golden brown.

  2. Add the chicken, spring onions, ginger, salt, soy sauce, wine and stock, bring to the boil and simmer gently for 20 minutes.

  3. Add the bamboo shoots and simmer for 2 minutes or until the liquid has almost all evaporated.

  4. Blend the corn-flour with the water, stir it into the pan and stir until thick.

  5. Transfer the chicken wings to a warmed serving plate and serve sprinkled with sesame oil.
