Chinese Meats Recipes - Rump Steak in Oyster Sauce Recipe

Ingredients

  • 4 oz. rump steak, cut in thin slices

  • 2 thin slices fresh ginger

  • salt, sugar and Ve-Tsin (M.S.G.)

  • 1/4 teaspoon soy sauce

  • 1 teaspoon corn-flour

  • 3 teaspoons cold water

  • 1 tablespoon peanut oil

  • 2 crushed cloves garlic

  • 1/2 teaspoon ginger sherry

  • 1/4 pint (U.S. 5/8 cup) hot chicken stock

  • 1 dessertspoon oyster sauce

  • parsley


Method:

  1. Place steak and ginger in a basin. Add a pinch salt, sugar and Ve-Tsin, 1/2 teaspoon corn-flour and 1 teaspoon water and work them well into the meat. Heat the oil.

  2. Fry the garlic in it until golden and then discard it. Fry the meat in the oil for 1-2 minutes; then remove.

  3. To the pan add the sherry, stock and another pinch salt, sugar and Ve-Tsin and bring to the boil.

  4. Add the oyster sauce and the remaining corn-flour, blended with the rest of the water, and boil for 1 1/2 minutes.

  5. Return the meat to the pan and heat through for 1/2 minute. Turn all into a heated serving dish and garnish with parsley.
