Recipes - Sesame Roast Chicken Recipe
Ingredients
50 g/2 oz sesame seeds
1 onion, finely chopped
2 cloves garlic, minced
10 ml/2 tsp salt
1 dried red chili pepper,
crushed
pinch of ground cloves
2.5 ml/1/2 tsp ground
cardamom
2.5 m/1/2 tsp ground ginger
75 ml/5 tbsp groundnut
(peanut) oil
1 chicken
Method:
Mix
together all the seasonings and oil
and brush over the chicken. Stand it in a roasting
tin and add 30 ml/2 tbsp of water to the tin.
Roast
in a preheated oven at 180C/350F/gas mark 4 for
about 2 hours, basting and turning the chicken
occasionally, until the chicken is golden and cooked
through.
Add a little more water, if necessary, to
prevent burning.
