Chinese Chicken Recipes - Sherry Chicken Recipe
Ingredients

30 ml/2 tbsp groundnut
(peanut) oil
-
4 chicken pieces
-
120 ml/4 fl oz/1/2 cup soy
sauce
-
500 ml/2 1/4 cups
rice wine or dry sherry
-
30 ml/2 tbsp sugar
-
5 ml/1 tsp salt

2 cloves garlic, crushed
-
1 slice ginger root,
chopped
Method:
-
Heat the oil and fry the chicken until browned on
all sides. Drain off excess oil and add all the
remaining ingredients.

Bring to the boil, cover and
simmer over a fairly high heat for 25 minutes.
-
Reduce the heat and simmer for a further 15 minutes
until the chicken is cooked through and the sauce
has reduced.
