Chinese Chicken Recipes - Sherry Chicken Recipe

Ingredients

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 4 chicken pieces

  • 120 ml/4 fl oz/1/2 cup soy sauce

  • 500 ml/2 1/4 cups rice wine or dry sherry

  • 30 ml/2 tbsp sugar

  • 5 ml/1 tsp salt

  • 2 cloves garlic, crushed

  • 1 slice ginger root, chopped


Method:

  1. Heat the oil and fry the chicken until browned on all sides. Drain off excess oil and add all the remaining ingredients.

  2. Bring to the boil, cover and simmer over a fairly high heat for 25 minutes.

  3. Reduce the heat and simmer for a further 15 minutes until the chicken is cooked through and the sauce has reduced.
