Chinese Chicken Recipes - Simple Chicken Stir-Fry Recipe
Ingredients

1 chicken breast,
thinly sliced
-
2 slices ginger root,
minced
-
1 spring onions
(scallions), minced
-
15 ml/1 tbsp corn-flour
(cornstarch)
-
15 ml/1 tbsp rice wine or dry
sherry
-
30 ml/2 tbsp water
-
2.5 ml/1/2 tsp salt
-
45 ml/3 tbsp groundnut
(peanut) oil
-
100 g/4 oz bamboo shoots,
sliced
-
100 g/4 oz mushrooms,
sliced
-
100 g/4 oz bean sprouts
-
15 ml/1 tbsp soy sauce
-
5 ml/1 tsp sugar
-
120 ml/4 fl oz/1/2 cup
chicken stock
Method:
-
Place the chicken in a bowl. Mix the ginger, spring
onions, corn-flour, wine or sherry, water and salt,
stir into the chicken and leave to stand for 1 hour.

Heat half the oil and stir-fry the chicken until
lightly browned then remove it from the pan.

Heat
the remaining oil and stir-fry the bamboo shoots,
mushrooms and bean sprouts for 4 minutes.

Add the
soy sauce, sugar and stock, bring to the boil, cover
and simmer for 5 minutes until the vegetables are
just tender.

Return the chicken to the pan, stir
well and reheat gently before serving.
