Chinese Chicken Recipes - Soy Sauce Chicken  Recipe

Ingredients

  • 300 ml/1 1/4 cups soy sauce

  • 300 ml/1 1/4 cups rice wine or dry sherry

  • 1 onion, chopped

  • 3 slices root ginger, minced

  • 50 g/2 oz/1/4 cup sugar

  • 1 chicken

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 60 ml/4 tbsp water

  • 1 cucumber, peeled and sliced

  • 30 ml/2 tbsp chopped fresh parsley


Method:

  1. Mix together the soy sauce, wine or sherry, onion, ginger and sugar in a pan and bring to the boil.

  2. Add the chicken, return to the boil, cover and simmer gently for 1 hour, turning the chicken occasionally, until the chicken is cooked.

  3. Transfer the chicken to a warmed serving plate and carve. Pour out all but 250 ml/8 fl oz/1 cup of the cooking liquid and bring it back to the boil.

  4. Blend the corn-flour and water to a paste, stir it into the pan and simmer, stirring, until the sauce clears and thickens.

  5. Brush a little of the sauce over the chicken and garnish the chicken with cucumber and parsley. Serve the remaining sauce separately.
