Chinese Chicken Recipes - Spicy Baked Chicken Recipe
Ingredients

150 ml/2/3 cup soy
sauce
-
2 cloves garlic,
crushed
-
50g/1/4 cup brown
sugar
-
1 onion, finely chopped
-
30ml/2 tbsp tomato
puree (paste)
-
1 slice lemon, chopped
-
1 slice ginger root,
minced
-
45 ml/3 tbsp rice wine
or dry sherry
-
4 large chicken pieces
Method:

Mix together all the ingredients except the chicken.

Place the chicken in an ovenproof dish, pour over
the mixture, cover and marinate overnight, basting
occasionally.

Bake the chicken in a preheated oven
at 180C/350F/gas mark 4 for 40 minutes, turning
and basting occasionally.

Remove the lid, raise the
oven temperature to 200C/ 400F/gas mark 6
and continue to cook for a further 15 minutes until
the chicken is cooked through.
