Chinese Chicken Recipes - Spicy Baked Chicken Recipe

Ingredients

  • 150 ml/2/3 cup soy sauce

  • 2 cloves garlic, crushed

  • 50g/1/4 cup brown sugar

  • 1 onion, finely chopped

  • 30ml/2 tbsp tomato puree (paste)

  • 1 slice lemon, chopped

  • 1 slice ginger root, minced

  • 45 ml/3 tbsp rice wine or dry sherry

  • 4 large chicken pieces


Method:

  1. Mix together all the ingredients except the chicken.

  2. Place the chicken in an ovenproof dish, pour over the mixture, cover and marinate overnight, basting occasionally.

  3. Bake the chicken in a preheated oven at 180C/350F/gas mark 4 for 40 minutes, turning and basting occasionally.

  4. Remove the lid, raise the oven temperature to 200C/ 400F/gas mark 6 and continue to cook for a further 15 minutes until the chicken is cooked through.
