Chinese Chicken Recipes - Steamed Chicken with Mushrooms Recipe

Ingredients

  • 4 chicken pieces

  • 30 ml/2 tbsp corn-flour (cornstarch)

  • 30 ml/2 tbsp soy sauce

  • 3 spring onions (scallions), chopped

  • 2 slices root ginger, chopped

  • 2.5 ml/1/2 tsp salt

  • 100 g/4 oz mushrooms, sliced


Method:

  1. Chop the chicken pieces into 5 cm/2 in chunks and place them in an ovenproof bowl.

  2. Mix the corn-flour and soy sauce to a paste, stir in the spring onions, ginger and salt and mix well with the chicken. Gently stir in the mushrooms.

  3. Place the bowl on a rack in a steamer, cover and steam over boiling water for about 35 minutes until the chicken is tender.
