Chinese Chicken Recipes - Steamed Chicken Recipe

Ingredients

  • 1 chicken

  • 45 ml/3 tbsp rice wine or dry sherry

  • salt

  • 2 slices ginger root

  • 2 spring onions (scallions)

  • 250 ml/8 fl oz/1 cup chicken stock


Method:

  1. Place the chicken in an ovenproof bowl and rub with wine or sherry and salt and place the ginger and spring onions inside the cavity.

  2. Place the bowl on a rack in a steamer, cover and steam over boiling water for about 1 hour until cooked through. Serve hot or cold.
