Finely chop the
meat and onion. (Chinese cooks do this with two
knives). Work in the remaining ingredients, except
the onion 'flower' and parsley garnish.
Knead very
well with the heel of the hand and throw the mixture
on to the board over and over again.
Knead into an
oval shape and place it on a plate which has been
lightly rubbed with a little peanut oil. Put it in a
steamer, cover tightly and steam for 15 minutes.
Slice it on to a
heated serving dish and garnish with the onion
'flower' and parsley.
