Chinese Chicken
Recipes - Stir Fried Chicken with Chili Recipe
Ingredients

225 g/8 oz chicken, sliced
-
2.5 ml/1/2 tsp soy sauce
-
2.5 ml/1/2 tsp sesame oil
-
2.5 ml/1/2 tsp rice wine or
dry sherry
-
5 ml/ tsp corn-flour
(cornstarch) salt
-
45 ml/3 tbsp groundnut
(peanut) oil

100 g/4 oz spinach
-
4 spring onions
(scallions), chopped
-
2.5 ml/1/2 tsp chili powder
-
15 ml/1 tbsp water

1 tomato, sliced
Method:
-
Mix the chicken with the soy sauce, sesame oil, wine
or sherry, half the corn-flour and a pinch of salt.
Leave to stand for 30 minutes.

Heat 15 ml/1 tbsp of oil and fry the chicken until lightly
browned. Remove from the wok. Heat 15 ml/1 tbsp of
oil and stir-fry the spinach until wilted then
remove it from the wok.

Heat the remaining oil and
fry the spring onions, chili powder, water and
remaining corn-flour for 2 minutes.

Stir in the chicken and stir-fry quickly. Arrange
the spinach around a warmed serving plate, top with
the chicken and serve garnished with tomatoes.
