Chinese Chicken Recipes - Stir Fried Chicken with Chili Recipe

Ingredients

  • 225 g/8 oz chicken, sliced

  • 2.5 ml/1/2 tsp soy sauce

  • 2.5 ml/1/2 tsp sesame oil

  • 2.5 ml/1/2 tsp rice wine or dry sherry

  • 5 ml/ tsp corn-flour (cornstarch) salt

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 100 g/4 oz spinach

  • 4 spring onions (scallions), chopped

  • 2.5 ml/1/2 tsp chili powder

  • 15 ml/1 tbsp water

  • 1 tomato, sliced


Method:

  1. Mix the chicken with the soy sauce, sesame oil, wine or sherry, half the corn-flour and a pinch of salt. Leave to stand for 30 minutes.

  2. Heat 15 ml/1 tbsp of oil and fry the chicken until lightly browned. Remove from the wok. Heat 15 ml/1 tbsp of oil and stir-fry the spinach until wilted then remove it from the wok.

  3. Heat the remaining oil and fry the spring onions, chili powder, water and remaining corn-flour for 2 minutes.

  4. Stir in the chicken and stir-fry quickly. Arrange the spinach around a warmed serving plate, top with the chicken and serve garnished with tomatoes.
