Chinese Chicken Recipes - Stir-Fried Chicken with Mushrooms Recipe

Ingredients

  • 6 dried Chinese mushrooms

  • 1 chicken breast, thinly sliced

  • 1 slice ginger root, minced

  • 2 spring onions (scallions), minced

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 15 ml/1 tbsp rice wine or dry sherry

  • 30 ml/2 tbsp water

  • 2.5 ml/1/1 tsp salt

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 225 g/8 oz mushrooms, sliced

  • 100 g/4 oz bean sprouts

  • 15 ml/1 tbsp soy sauce

  • 5 ml/1 tsp sugar

  • 120 ml/4 fl oz/1/2 cup chicken stock


Method:

  1. Soak the mushrooms in warm water for 30 minutes then drain. Discard the stalks and slice the caps. Place the chicken in a bowl.

  2. Mix the ginger, spring onions, corn-flour, wine or sherry, water and salt, stir into the chicken and leave to stand for 1 hour.

  3. Heat half the oil and stir-fry the chicken until lightly browned then remove it from the pan. Heat the remaining oil and stir-fry the dried and fresh mushrooms and the bean sprouts for 3 minutes.

  4. Add the soy sauce, sugar and stock, bring to the boil, cover and simmer for 4 minutes until the vegetables are just tender.

  5. Return the chicken to the pan, stir well and reheat gently before serving.
