Chinese Chicken Recipes - Stir Fried Chicken with
Peppers Recipe
Ingredients
1 chicken breast, thinly
sliced
2 slices ginger root,
minced
2 spring onions
(scallions), minced
15 ml/1 tbsp corn-flour
(cornstarch)
30 ml/2 tbsp rice wine or
dry sherry
30 ml/2 tbsp water
2.5 ml/1/2 tsp salt
45 ml/3 tbsp groundnut
(peanut) oil
100 g/4 oz water chestnuts,
sliced
1 red pepper, cut into
strips
1 green pepper, cut into
strips
1 yellow pepper, cut into
strips
30 ml/2 tbsp soy sauce
120 ml/4 fl oz/1/2 cup
chicken stock
Method:
Place the chicken in a bowl. Mix the ginger, spring
onions, corn-flour, wine or sherry, water and salt,
stir into the chicken and leave to stand for 1 hour.
Heat half the oil and stir-fry the chicken until
lightly browned then remove it from the pan. Heat
the remaining oil and stir-fry the water chestnuts
and peppers for 2 minutes.
Add the soy sauce and
stock, bring to the boil, cover and simmer for 5
minutes until the vegetables are just tender.
Return
the chicken to the pan, stir well and reheat gently
before serving.
