Recipes - Stuffed Chicken Wings Recipe
Ingredients
2 middle joints of chicken
wings (white cut chicken)
2 strips cooked ham
2 strips raw carrot
2 strips raw Pacific prawn
salt and pepper
little beaten egg
1 teaspoon self-raising
flour
peanut oil
4 tablespoons chicken stock
few drops soy sauce
few drops ginger sherry
pinch Ve-Tsin

1/2 teaspoon corn-flour
1 teaspoon water
parsley sprigs
Method:
The wings are
taken from the white cut chicken. The middle joints
are held firmly in one hand and gently turned and
twisted with the thumb and forefinger of the other
so that the bones can be removed easily.
Fill each bone
cavity with a thin strip each of the ham, carrot and
prawn. Season with salt and pepper, then dip in the
beaten egg and then the flour. Deep fat fry
them in the very hot oil for 1 - 1 1/2 minutes.
Meanwhile, make
the sauce. Put the stock in
a small pan, add the soy sauce, sherry, pinch of
salt and pinch of Ve-Tsin and bring to the boil.
Blend the corn-flour with the water and stir it into
the well-flavored stock.
Cut the stuffed
wings into pieces and place them in a heated serving
dish. Spoon the sauce over them and garnish with the
parsley sprigs.
