Chinese Chicken Recipes - Sweet and Sour Chicken Livers Recipe

Ingredients

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 450 g/1lb chicken livers, quartered

  • 2 green peppers, cut into chunks

  • 4 slices canned pineapple, cut into chunks

  • 60 ml/4 tbsp chicken stock

  • 30 ml/2 tbsp corn-flour (cornstarch)

  • 10 ml/2 tsp soy sauce

  • 100 g/4 oz/1/2 cup sugar

  • 120 ml/4 fl oz/1/2 cup wine vinegar

  • 120 ml/4 fl oz/1/2 cup water


Method:

  1. Heat the oil and fry the livers until lightly browned then transfer them to a warmed serving dish. Add the peppers to the pan and fry for 3 minutes.

  2. Add the pineapple and stock, bring to the boil, cover and simmer for 15 minutes.

  3. Blend the remaining ingredients to a paste, stir into the pan and simmer, stirring, until the sauce thickens. Pour over the chicken livers and serve.
