Chinese Chickens Recipes - Sweet Sour Chicken Recipe

Ingredients

  • 1 cooked breast of chicken

  • 1/4 pint (U.S. 5/8 cup) chicken stock

  • 4 tablespoons water

  • 1/2 small clove garlic, crushed

  • 1 teaspoon peanut oil

  • 3/4 teaspoon sugar

  • 1/4 tablespoon tomato puree

  • 4 tablespoons vinegar

  • pinch salt

  • 1/2 teaspoon corn-flour

  • 1 teaspoon water

  • Chinese pickles for garnish


Method:

  1. Take the breast from the cooked white cut chicken . Add it to the heated stock and leave it for 2-3 minutes at just under boiling point.

  2. In a small pan, mix together the water, garlic, oil, sugar, tomato puree, vinegar and salt. Whisk while you bring them to the boil.

  3. Blend the corn-flour with the water and stir it in. Simmer for 1 1/2-2 minutes to complete the sweet-sour sauce. Drop in Chinese pickles to heat.

  4. Lift out the chicken, cut it into mouth-sized pieces and place them in a heated serving dish. Strain the hot sauce over them, garnish with the pickles and serve.
