Recipes - Sweet Sour Chicken Recipe
Ingredients
1 cooked breast of chicken
1/4 pint (U.S. 5/8 cup) chicken
stock
4 tablespoons water
1/2 small clove garlic,
crushed
1 teaspoon peanut oil
3/4 teaspoon sugar
1/4 tablespoon tomato puree
4 tablespoons vinegar
pinch salt
1/2 teaspoon corn-flour
1 teaspoon water
Chinese
pickles for garnish
Method:
Take the breast
from the cooked white cut chicken . Add
it to the heated stock and leave it for 2-3 minutes
at just under boiling point.
In a small pan,
mix together the water, garlic, oil, sugar, tomato
puree, vinegar and salt. Whisk while you bring them
to the boil.
Blend the corn-flour with the water and
stir it in. Simmer for 1 1/2-2 minutes to complete
the sweet-sour sauce. Drop in Chinese pickles to
heat.
Lift out the
chicken, cut it into mouth-sized pieces and place
them in a heated serving dish. Strain the hot sauce
over them, garnish with the pickles and serve.
