Chinese Meats Recipes - Sweet Sour Pork with Pineapple Recipe

Ingredients

  • 3 oz. cooked lean raw pork

  • peanut oil

  • 1 tablespoon green sweet pepper, diced

  • 1 small onion, chopped

  • 1 teaspoon tomato puree

  • 2 small tablespoons sugar

  • pinch salt

  • 2 tablespoons chicken stock

  • 2 tablespoons wine vinegar

  • 1 small teaspoon corn-flour

  • 1 dessertspoon water

  • 2 tablespoons ripe tomato wedges

  • 2 tablespoons canned pineapple wedges, chopped

  • 1 small chopped chili, pounded to paste


Method:

  1. Cut pork into 3/4-inch dice; fry in deep peanut oil hot enough to give it a pale golden color in 3 minutes. Drain and leave to become cold. Cut pepper into strips and place ready.

  2. Heat 1 tablespoon peanut oil in frying-pan. Fry onion, tossing it about so that it cooks but does not color.

  3. Remove from heat and work in tomato puree and sugar, add salt and chicken stock and return to heat. Add vinegar.

  4. Meanwhile turn pork into very hot oil to brown. Blend corn-flour and water and stir into sauce in frying-pan.

  5. Add green pepper and cook for 1 minute, add tomatoes, and cook 1/2 minute, add pineapple and chili; toss for about 1/2 minute.

  6. Meanwhile when pork is a rich gold, drain thoroughly and turn into frying-pan with other ingredients. Toss them together for a moment. Put on a dish and serve.

Note: The pork should be cooked to a pale cream color and left to become cold.
