Chinese Chicken
Recipes - Turkey with Peppers Recipe
Ingredients
4 dried Chinese
mushrooms
30ml/2 tbsp peanut oil
1 Chinese cabbage cut
into strips
350g/12 oz smoked
turkey, cut into strips
1 onion, sliced
1 red pepper cut into
strips
1 green pepper cut into
strips
120ml/1/2 cup chicken
stock
30ml/2 tbsp tomato
paste
45ml/3 tbsp wine
vinegar
30ml/2 tbsp soy sauce
15ml/1 tbsp hoisin
sauce
10ml/2 tsp corn-flour
few drops of chili oil
Method:
Soak the mushrooms in warm water for 30 minutes then
drain. Discard the stalks and cut the caps into
strips.
Heat half the oil and stir-fry the cabbage
for about 5 minutes or until cooked down. Remove
from the pan.
Add the turkey and stir-fry for 1
minute. Add the vegetables and stir-fry for 3
minutes.
Mix the stock with the tomato puree, wine
vinegar and sauces and add to the pan with the
cabbage.
Mix the corn-flour with a little water,
stir it into the pan and bring to the boil,
stirring. Sprinkle with chili oil and simmer for 2
minutes, stirring continuously.
