Chinese Chicken Recipes - Turkey with Walnuts and Mushrooms Recipe

Ingredients

  • 450 g/1lb turkey breast fillet

  • salt and pepper

  • juice of 1 orange

  • 15 ml/1 tbsp plain (all-purpose) flour

  • 12 pickled black walnuts with juice

  • 5 ml/1 tsp corn-flour (cornstarch)

  • 15 ml/1 tbsp groundnut (peanut) oil

  • 2 spring onions (scallions), diced

  • 225 g/8 oz button mushrooms

  • 45 ml/3 tbsp rice wine or dry sherry

  • 10 ml/2 tsp soy sauce

  • 50 g/2 oz/1/4 cup butter

  • 25 g/1 oz pine kernels


Method:

  1. Cut the turkey into 1 cm/1/2 in thick slices. Sprinkle with salt, pepper and orange juice and dust with flour.

  2. Drain and halve the walnuts, reserving the liquid, and mix the liquid with the corn-flour. Heat the oil and stir-fry the turkey until golden brown.

  3. Add the spring onions and mushrooms and stir-fry for 2 minutes. Stir in the wine or sherry and soy sauce and simmer for 30 seconds.

  4. Add the walnuts to the corn-flour mixture then stir them into the pan and bring to the boil. Add the butter in small flakes but do not allow the mixture to boil.

  5. Toast the pine kernels in a dry pan until golden. Transfer the turkey mixture to a warmed serving plate and serve garnished with pine kernels.
