Chinese Chicken Recipes - Walnut Chicken Recipe

Ingredients

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 2 spring onions (scallions), chopped

  • 1 slice ginger root, minced

  • 450 g/1lb chicken breast, very thinly sliced

  • 50 g/2 oz ham, shredded

  • 30 ml/2 tbsp soy sauce

  • 30 ml/2 tbsp rice wine or dry sherry

  • 5 ml/1 tsp sugar

  • 5 ml/1 tsp salt

  • 100 g/4 oz/1 cup walnuts, chopped


Method:

  1. Heat the oil and stir-fry the onions and ginger for 1 minute.

  2. Add the chicken and ham and stir-fry for 5 minutes until almost cooked.

  3. Add the soy sauce, wine or sherry, sugar and salt and stir-fry for 3 minutes.

  4. Add the walnuts and stir-fry for 1 minute until the ingredients are thoroughly blended.
