White Cut Chicken

Ingredients
5 1/2 -6 lb. fat capon
salt
1/2 oz. fresh ginger,
crushed
Method:
Have ready a pot
of slightly salted boiling water, enough to cover
the bird. Lower the cleaned capon into it, put on
the lid and bring to the boil again.
Lift out the
bird by inserting the handle of a wooden spoon into
the vent and drain the liquid back into the pot.
Sprinkle the
inside of the bird with salt and place half the
crushed ginger in it. Drop the rest of the ginger
into the pot and return the bird to it. Cover, bring
to the boil again, and simmer for 5 minutes.
Remove the pot
from the, heat and leave it, covered, for 1 hour when
the bird will be just warm. Carve the capon into
suitable pieces and coat them with the garlic sauce
if used.
