Dim Sum Recipes - Wonton With Pork And
Prawn Or Shrimp
Ingredients
2 tbsp vegetable oil
8 oz lean pork, ground
1 1/3 cups finely chopped
peeled shrimp
2 tbsp soy sauce
1 tbsp rice wine or dry sherry
1/2 tsp salt
5 bamboo shoots, finely chopped
2 dried mushrooms, soaked in
cold water for 30 minutes, drained and chopped
2 scallions, finely chopped
1 tsp cornstarch, mixed to a
paste with 1 tbsp water
8 oz wonton dough (see recipe),
thinly rolled and cut into 36 squares, or 36 bought
wonton wrappers vegetable oil for deep-frying
Method:
Heat
the oil on a frying-pan. When it is hot, add the
pork and fry until it loses its pinkness. Stir in
the prawns or shrimps, rice wine or sherry, soy
sauce, salt, bamboo shoots, mushrooms and spring
onions (scallions) and fry for 1 minute, stirring
constantly. Stir in the cornstarch mixture until the
pan mixture thicken. Remove from the heat and
transfer the mixture to a bowl. Set a side to cool.
Lay
the wonton squares or wrappers on a flat surface.
Put a little filling just over the filling to make a
triangle and pinch the edges together to seal. Pull
the corners at the base together and pinch to seal.
Repeat this process until all the wonton wrappers
are filled and sealed.
Fill
a large saucepan one-third full with oil and heat
until it is hot. Carefully lower the wontons into
the oil, a few at t a time, and fry for 2-3 minutes,
or until they are golden brown. Remove from the oil
and drain on kitchen towels. Transfer the wontons to
a warmed serving dish and serve hot.
