Barbecued Spare Ribs
Ingredients
8 spare ribs of pork
3 spring onions (shredded)
peanut oil
1 tbsp yellow soy bean
1 tbsp red bean curd
1 dessertspoon ginger sherry *
1 level tsp salt
2 tbsp sugar
1 tsp (M.S.G)
1 tbsp soy sauce
Method:
* TO
MAKE GINGER SHERRY: Cut 1-2 oz fresh ginger into
thin strips. Turn them into a bottle and cover with
a warm brown sherry. Leave to infuse, strain and use
as directed. For 2 oz fresh ginger, 1/2 bottle
sherry will be the right amount to add.
Wash
the ribs well in cold water. Spread a little peanut
oil over the inside of a roasting tin or heatproof
dish which will hold the ribs comfortably in one
row. Lay the spare ribs in it.
In a
basin, mix and pound together to a pulp the soy bean
and bean curd. Well work in the sherry, salt, sugar
and (M.S.G) to a smooth pulp. Add and work in the
soy sauce.
Cover the spare ribs with this mixture. Place for 20
minutes in a very hot oven (450F or Gas Mark 8).
Turn the ribs and cook for another 30 minutes, then
return them again and cook for 20 minutes more.
Place with their sauce on a heated serving dish and
garnish with the spring onions.
