Pork Pellets
Ingredients
24 wonton wrappers
4 spring onions, shredded or
sprigs watercress
2 tbsp cooked pork
2 tbsp raw Pacific prawns
1 Chinese mushroom
2 canned water chestnuts
tiny pinch salt
tiny pinch sugar
tiny pinch (M.S.G)
1 small tsp ginger sherry
few drops sesame oil
shake or two pepper
little beaten egg
peanut oil for deep-frying
Method:
very
finely chop the pork, cleaned prawns, mushroom and
water chestnuts. Mix them together. Add the
remaining ingredients and work them thoroughly
together. Leave for the time being.
TO
MAKE PORK PALLETS: Chop the pork, bamboo shoots,
mushroom and water chestnut. Mix then together and
season with the salt, sugar and M.S.G. Place a
portion firmly on one corner of each wonton wrapper.
Fold over in a narrow fold and fold again. Dot one
side with beaten egg and bring the opposite side
over and under and pinch together.
Heat
the peanut oil in a suitable pan for deep-frying.
Fry the pallets a few at a time, to a warm golden
color.
Drain on absorbent paper, place in a heated serving
dish and garnish with the spring onions or sprigs of
watercress.
