Combine
the eater, soy sauce, wine or sherry, sugar and salt
and set aside.
Heat
half the oil in a large frying-pan for 30 seconds.
Add half the meat to the pan and fry for 2 minutes,
stirring and turning constantly.
Transfer the cubes to a plate. Add the remaining oil
and remaining beef cubes to the pan and fry until
they are lightly browned. Return the first batch of
cubes to the pan and stir in the soy sauce mixture.
Bring to the boil. Cover, reduce the heat to low and
simmer for 1 1/2 to 2 hours, stirring occasionally,
or until the beef is cooked through and tender.
Transfer the mixture to a warmed serving dish and
serve at once.
