1 large green pepper, pith and
seeds removed and cut into thin strips
1 red pepper, pith and seeds
removed and cut into thin strips
3 garlic cloves, crushed
3 spring onions, chopped
1 chili, chopped
1 1/2 tbsp bean paste
2 tsp sugar
2 tbsp rice wine or sherry
Method:
Put
the pork into a large saucepan and cover with water.
Bring to the boil, cover and simmer for 1 hour, or
until the pork is cooked through. Drain and rinse i
cold water. When it is cool enough to handle, chop
or cut through the lean and fat into thin strips.
heat
half the oil in a frying-pan, When it is very hot,
add the pork pieces and stir-fry for 5 minutes.
Remove the pan from the heat, transfer the pork to a
dish and drain off the oil.
Add
the remaining oil to the pan. When it is very hot,
add the peppers, garlic and spring onions and
stir-fry for 2 minutes. Add the pork, chili and
bean paste and stir-fry for 1 minute. Stir in the
remaining ingredients and stir-fry until they are
heated through. Serve at once.
