Pineapple And Ginger Ice-Cream
Ingredients
-
1/2 small fresh pineapple,
peeled, cored, and cut into chunks (reserve and
juice)

4 tbsp rice wine or dry sherry
-
2 1/2 cups (600ml) vanilla
ice-cream
-
1oz (25g) crystallized
(candied) ginger, chopped
Method:
-
Mix
the pineapple juice and rice wine or sherry in a
bowl. Add the pineapple chunks and set aside for 10
minutes.

Beat
the ice-cream in a serving bowl until it has
softened slightly. Gently fold in the pineapple
chunks mixture and crystallized (candied) ginger
until they are well mixed. Serve at once.
