Deep-Fried Sliced Pork
Ingredients
1 1/2lb (700g) pork tenderloin
2 egg whites
1 1/2 tbsp cornstarch
vegetable oil for deep-frying
DIP
1 tbsp black pepper
1 tbsp salt
Method:
Slice the pork against the grain into thin slices.
Using a mallet, bat the slices until they are very
thin, then cut into uniform strips, about 7.5cm by
5cm (3 inch x 2 inch). Put the strips into a bowl
and set aside.
Beat
the egg whites until they are frothy. Gradually beat
in the cornstarch until the mixture forms a smooth
batter. Pour the batter into the bowl and toss the
pork strips until they are thoroughly coated. Set
aside for 10 minutes.
Fill
a large saucepan one-third full with oil and heat
until it is hot. Carefully lower the meat strips. a
few at a time, into the oil and fry for 1 minute
until they are browned and crisp. Remove from the
oil ad drain on kitchen towels.
TO
MAKE THE DIP: Fry the salt and pepper in a small
frying-pan over moderately low hat for 4 minutes,
stirring constantly. Remove from the heat and
transfer the mixture to a small bowl. Serve the pork
at once, with the dip.
