Meat Recipes - Pork Simmered In Master Sauce

Ingredients

  • 1 x 3lb (1 x 1.5kg) leg of pork, boned and trimmed or excess fat

SAUCE

  •  2 1/2 cups (600ml) soy sauce

  • 1 1/4 cups (300ml) rice wine or dry sherry

  • 2/3 cup (150ml) chicken stock

  • 4 tbsp soft brown sugar

  • 2 garlic cloves, crushed

  • 1 inch (2.5cm) piece of fresh green ginger, peeled and chopped

  • 2 bouquets garnis


Method:

  1. Put the pork in a large saucepan and just cover with water. Bring to the boil, reduce the heat to moderate and cook for 6 minutes. Remove from the heat, drain the pork and set aside. Discard the cooking liquid.

  2. TO PREPARE THE SAUCE: Combine all the ingredients together until they are thoroughly blended. Bring to the boil, stirring frequently. Reduce the heat to low and carefully arrange the pork in the sauce, immersing it completely. Simmer for 1 1/2 hours, turning the pork every 30 minutes.

  3. Remove from the heat and transfer the pork to a carving board. Cut the meat into thin slices and arrange the slices decoratively on a warmed serving dish.

  4. Strain the sauce into a sauceboat and pour a little over and around the meat. Serve at once, accompanied by the remaining sauce.
