Meat Recipes - Quick-Fried beef With Oyster Sauce

Ingredients

  • 1 1/2 lb lean fillet steak, cut into thin strips

  • 1 1/2 tsp salt

  • 1/4 tsp white pepper

  • 1/4 tsp ground ginger

  • 1 tbsp cornstarch

  • 1 tbsp soy sauce

  • 2 1/2 tbsp oyster sauce

  • 1 tsp sugar

  • 2 tbsp rice wine or dry sherry

  • 1/3 cup (75ml) vegetable oil

  • 1 medium onion, thinly sliced

  • 1 garlic clove, crushed


Method:

  1. Rub the beef strips with salt, pepper, ginger and cornstarch.

  2. Combine the soy sauce, oyster sauce, sugar and rice wine or sherry in a bowl and set aside.

  3. Heat the oil in a large frying-pan. when it is hot, add the onion and garlic and fry for 30 seconds, stirring constantly. Add the beef to the pan and fry for 2 minutes, stirring constantly. Pour off all but a thin film of oil from the pan.

  4. Pour the reserved oyster sauce mixture over the beef and cook for a further 1 1/2 minutes, stirring constantly. Remove from the heat and transfer the beef slices to a warmed serving dish. Pour over the sauce and serve at once.
