Meat Recipes - Quick Fried Beef With Triple Shreds

Ingredients

  • 1 lb (0.5kg) fillet of beef, sliced across the grain, then cut into strips

  • 3 tbsp soy sauce

  • 1 tbsp dry sherry

  • 1 tsp sugar

  • salt and pepper to taste

  • 3 tbsp vegetable oil

  • 1 inch piece of fresh green ginger, peeled ant thinly sliced

  • 1 large leek, white part only, sliced

  • 1 onion, thinly sliced

  • 2 tbsp butter


Method:

  1. Put the beef strips in a shallow bowl. Combine the soy sauce, sherry, sugar and salt and pepper and pour over the strips, rubbing the mixture into the meat with your fingers. set aside for 10 minutes.

  2. Heat the oil in a frying-pan. When the oil is very hot, add the ginger, leek and onion and stir-fry for 1 minute over moderately high heat.

  3. Transfer to a warmed plate and set aside.

  4. Add the butter to the pan and melt it over moderately high heat. add the beef strips and stir-fry for 1 minute. Return the vegetables to the pan and stir-fry for a further 1 minute.

  5. Transfer the mixture to a warmed dish and serve.
